Directions
Bring water to a boil. While water is boiling, chop squash, zucchini and onions. Put Pasta in water and boil approximately 7 minutes. Sautee zucchini, squash, and onion in the olive oil (covered). When the pasta is almost done the vegetables should be good and cooked. Add the can of diced tomato. (I will sometimes add adobo and garlic powder to squash zucchini and onion mixture while it's cooking) Drain pasta. When tomato sauce is hot, combine pasta and tomato/vegetable sauce.
Makes about 4 1~cup servings.

I made this recipe for my family and did not tell them it was wheat pasta. We enjoyed it and my girls finished the leftovers the next day. It's a keeper. - 5/30/09
