3 oz. cooked chicken or turkey (can substitue with 1 hard boiled egg or 1/2 can tuna or salmon)2 tbsp. low fat mayonnaise1 tbsp. barbeque sauce, pesto or dijon mustard (you can also use paprika or curry powder if you want a different flavor)1 tbsp. red onion, chopped (you can substitute shallots, green onions or chives)1 tbsp. red pepper, chopped (or any color pepper will do)1 tbsp. celery, chopped2 slices whole grain bread2 tsp. butter (optional)1 lettuce leaf1 slice tomato1 small apple
Mix cooked or canned meat with mayonnaise, onion, peppers, celery and seasonings. Butter bread and top with salad mixture, lettuce and tomato. Serve with apple.
