Fresh Cucumber Tabbouleh

3/4 c bulgar wheat, dried1/2 a medium-sized cucumber, peeled and chopped1/4 c chopped fresh scallions1/4 c toasted chopped walnuts1/4 c raisins1/4 c sundried tomatoes, sliced1/4 c fresh cilantro1/4 c feta cheeseFor the dressing:3 T lemon juice1/4 c chopped scallions2 T honeysalt & pepper to taste
Soak bulgar wheat in 1-1.5c hot water until pliable and chewy. Whisk together lemon juice, honey, 1/4 c scallions and salt and pepper in a medium sized mixing bowl. Add wheat, chopped cucumber, remaining scallions, sundried tomatoes, rasins, toasted walnuts, and fresh cilantro. Toss until coated with vinagrette. Top with feta and serve.
