Pintos & greens burrito filling

1.5 C collard greens, chopped, tough ribs removed2 cloves garlic, peeled and chopped15 oz can organic fat-free pinto beans (look for lower sodium brands)HALF of a 14.5 oz can diced tomatoes with chiles1 t ground cumin1 t dried oregano1 T lime juice1/8 t salt (if needed)3 T fresh cilantro, chopped (optional)
Makes 3 servings of 2 burritos per serving. (Filling for 6 small-medium burritos, in total.)
- Put a small amount (about 1") water in a saucepan.
- Add chopped collard greens, garlic, and salt.
- Cover, bring to a boil and cook until tender and bright green (8-10 min)
- Add remaining ingredients (except cilantro).
- Simmer for additional 3-4 min with lid off.
- Remove from heat and add cilantro, if desired.
Serve a small scoop (1/6 of total) in a toasted whole-wheat tortilla.
Try other greens, other beans. Kale takes about as long to cook as collards. Chard (esp. young), or spinach will take less time. Don't overcook!
