3 Egg Roll Wrappers1 Cup Chopped Cabbage1/2 cup matchstick carrots1/2 cup cucumber1 Tbsp Low fat ginger dressing1/4 tsp ground ginger
Stir fry carrots and cabbage in small skillet for about 3 minutes, adding ground ginger, salt and pepper to season. When done place in small bowl with 1 tbsp low fat ginger dressing. Mixx together. Lay egg roll wrapper on cutting board. Moisten each side. Fill with 1/3 of the filling and 1/3 of the cucumber. Wrap as directed at place on greased baking sheet. Repeat for other 2 egg rolls. Lightly spray tops with PAM or other non calorie spray. Bake at 400 for about 15 minutes, flipping halfway through. Serve with your favorite dipping sauce.
