Fabulously Moist Rhubarb Cake

Ingredients
1 1/2 cups raw rhubarb cut fine1 cup brown sugar1/2 cup white sugar1 large egg1/2 cup (1 stick) Land O Lakes Light Butter1 cup Mott's Original Applesauce1/2 tsp. salt1 tsp. baking soda1 tsp. vanilla extract2 cups flour
Directions
In large mixing bowl cream sugars and butter, add egg and salt. Stir in applesauce, soda, vanilla, and flour. Add rhubarb. Pour in prepared 9 x 13 inch baking pan and sprinkle with 1/4 cup white sugar and 1 tsp. cinnamon. Bake at 375 degrees for 30-35 minutes. The cake is very moist and needs no frosting.

Cake could be made with low fat ingredients, I opted not to, so nutrition information is with "regualr" ingredients. It could also yield more servings if wished.

    This was very good, however, it took some additional sugar to sweeten the rhubarb before adding it to the recipe. I think it could go without the sugar sprinkled on top too, but this was really moist and easy to make - 7/13/12

    Made this as a half recipe because I didn't want an entire cake sitting around to tempt me. I also substituted Splenda for both the white and brown sugar. It's GREAT! Wonderful flavor. I also used homemade applesauce to eliminate any added sugars from the store bought. - 5/11/10
