Potato Egg salad

Ingredients
-2 large potatoes, peeled- 3 large eggs- 1 large cucumber (peeled)- 3 large carrots- 3/4 cup mayonnaise- salt and white pepper powder to taste
Directions
Makes about 6 to 8 servings if eating on bread

1. Cut the potatoes and carrots into large chunks.

2. Put the potatoes and carrots and eggs in a pot and either steam cook or boil until tender. Then drain.

3. Dice everything and dump in big pot. Add mayonnaise a spoonful at a time until desired consistency. Add salt and white pepper powder to taste.
