Chocolate with a Conscience

1 c cake flour, sifted (I used whole-wheat pastry)1/3 c unsweetened cocoa powder1 tsp baking soda1 tsp baking powder5-6 egg whites (I had five & it worked)1 1/3 c packed brown sugar1 c plain non-fat yogurt (I had vanilla, Delicious!)1/2-1 tsp vanilla extrat (1/2 if you use vanilla yogurt)cooking spraypowdered sugarvanilla or cherry frozen yogurt (not included in nutrient values)
Combine flour, cocoa, baking powder and soda, set aside.
Beat egg whites, sugar, yogurt and vanilla in a large bowl until wall-blended. Stir in flour mixture and beat until evenly moistened.
Pour batter into an 8" square pan which has been sprayed with cooking spray and lightly dusted with cocoa powder. Bake at 350 for 30-40 min or until cake springs back when lightly touched in center.
Remove cake from oven and let cool for 15 min. Invert onto serving platter and dust with powdered sugar. Serve with vanilla or cherry frozen yogurt.
