Curried Chicken

Ingredients
1 medium onion, diced8 boneless, skinless chicken thighs, cut into chunks10-20 grams ginger root, chopped thin2 cloved garlic, chopped1/2 tsp paprika1/2 tsp coriander, finely groundCurry powder to tasteCilantro to taste
Directions
Heat oil in large saucepan, saute onions until translucent. Add chicken chunks and cook until chicken is no longer pink. Add garlic and ginger, stir. Add other spices and tomatoes, stir and cook approximately 20 minutes.
Optional: Add 3-5 tsp. of cream or full-fat yogurt to add richer flavor. Adjust cilantro and curry powder/paste to taste. Enjoy!
