Ingredients
1 tbsp butter10 oz frozen spinach, defrosted and drained1/4 cup cottage cheese1/4 cup parmesan cheese1/4 cup sour cream1 tbsp curry
Directions
Defrost the spinach in the microwave and squeeze out all excess water. Set aside.

In a sauce pan, melt one tbsp butter. Add spinach and stir to coat. Fold in cottage cheese until curds begin to melt. Add parmesan. When parmesan has melted, fold in sour cream and curry. Heat through. Serve with your favorite meat.

Calories can be cut further by substituting olive oil or a spray for the butter.
