Chocolate (Coconut Flour) Cake

3/4 C Coconut Flour5 Tbs Cocoa powder1 T fine ground coffee1/2 C Coconut Crystals1/4 C Xylitolpinch salt1/2 tsp baking powder1/4 tsp baking soda1/4 coconut oil (melted on low temp)1/4 milk w/1 tsp vinegar or butter milk1 tsp vanilla extract1/2 c beets, canned, drained4 lg eggs3/4 C coconut milk (possibly more) the kind when you shake can it sounds thick.
Combine eggs, drained beets, buttermilk, vanilla, coconut oil, coconut milk in blender till smoothe.
Combine dry ingredients, gentle mix by hand dry ingredients into wet ingredients.
Bake @ 350 for 35-50 minutes. Giggle pan, cake is done when barely moves in center. Do not over bake.
For topping: in double boiler melt 1/2 c 60% cocoa chocolate bar or chips. Add 1 T coconut milk and 1 T coffee. When cake is completely cool, spread topping and enjoy!
