(Patties) Sweet potato and coconut fritters

1 cup peeled, cooked and lightly mashed gold sweet potato1 egg1/3 cup light coconut milk2 tbs castor sugar1 tsp vanilla essence1/2 cup self-raising flour - siftedOil for pan fryingCinnamon and icing sugar for
Beat together sweet potato, egg, coconut milk, sugar and vanilla.
Fold through sifted flour and mix to a batter.
Moderately heat frying pan. Coat with a little oil and fry spoonfuls of mixture on both sides until golden and crispy.
Repeat this process until all the mixture is used.
Dust with cinnamon and icing sugar and serve whilst warm.
