Teriyaki Salmon Dinner

Ingredients
2 lb. salmon filletsTeriyaki marinade (you can use spicy or sweet), about 12 ounces2 cups frozen broccoil1 cup red pepper strips (jarred is okay)1.5 cups chicken broth2 cups instant rice
Directions
Take the salmon fillets. Cover with marinade and place in the refrigerator for 30 minutes. Place on a baking sheet. Cover with some of the marinade, and discard the rest.

Pour the rest of the marinade in a skillet. Heat it to boiling. Add the frozen broccoli and red peppers. Stir fry for about 5 minutes.

Meanwhile, heat the broiler.

Add the chicken broth to the skillet. Place the fish under the broiler.

Bring the broth to a boil, then add the rice. Remove from heat and cover for 5 minutes.

The fish is done when it flakes easily with a fork.

Serve the fish with rice and vegetables.
