Mock Enchilada Casserole

Ingredients
2 Tbsp butter2 Tbsp minced onion8 oz can of tomato sauce4 oz can of diced green chilis1 tsp Italian seasoning1/2 tsp celery salt1/2 tsp pepper2 eggs1 cup light cream6 corn tortillas, torn into pieces1/4 lb Muenster cheese, sliced1/2 cup Cheddar cheese, grated1/2 pint sour creampaprika
Directions
Melt butter in skillet, add onion and saute (do not brown). Add tomato sauce, green chilis, Italian seasoning, celery salt, and pepper. Simmer for 5 minutes. In a bowl, lightly beat eggs, adding cream, and mixing well. Remove tomato mixture from heat and mix into egg mixture. Cover the bottom of a 2 qt casserole dish with 1/3 of the torn tortillas, 1/3 of the sauce mixture, and 1/3 of the Muenster cheese. Repeat twice. Top with sour cream and Cheddar cheese. Garnish with paprika.

Bake at 350 degrees for one hour.
