FILLING500 grams pitted dates2 tbsp honey1 1/2 cups water1 tbsp lemon juice1 tsp lemon rindBASE & TOPPING1/2 cup olive oil spread, or olive oil3/4 cup unsweetened applesauce3 tbsp honey1 cup whole wheat flour1 cup oats1/4 tsp baking soda
Preheat oven to 350 degrees. Spray a 9" square pan with non-stick spray.
Combine filling ingredients in a saucepan. Boil, then reduce heat and simmer for about 10 minutes; until thick. Mash dates with a potato masher.
In a bowl combine the base and topping ingredients. Place 2/3 of mixture in baking pan. Spread out. Pour date mixture in. Smooth out. Top with remaining oat mixture. Spread as good as you can...
Bake fopr about 25 minutes.
Makes 24 squares.
