Ukrainian Sweet and Sour Cabbage Soup

2 Tbsp butter1 onion, thin sliced1 Granny Smith apple, cored, peeled and sliced3 c. shredded red cabbage4 c. beef stock1/2 c. cider vinegar1/4 c. packed brown sugar1/2 tsp. salt1/2 tsp balck pepper1/4 tsp celery seed1/3 c. raisins1/4 c. apple butter
Saute apple and onion in butter until tender.
Stir in cabbage and saute for 5 minutes.
Add beef stock and vinegar, bring to boil.
Reduce heat, stir in sugar, salt, pepper, celery seed and raisins.
Simmer uncovered for one hour.
Stir in apple butter, serve.
Substitute vegetable stock for beef stock to make vegetarian.
