Cheese Blintz Sweet Omelet

2 egg whites2 T Kefir, unsweetened plain (or yogurt)1 scoop protein powder (33g scoop= 25 g protein)Dash salt2 T lowfat cottage cheese1 T Polaner's All Fruit Jam2 packets Truvia
Heat cast iron skillet. Spray with cooking spray or use 1 t Smart Balance spread.
lightly beat protein powder into eggwhites and kefir. Pour into hot skillet and spread thinly. Sprinkle with one packet of Truvia.
When the edges are dry and bottom cooked enough to fold, spread cottage cheese on one half of the omelet. Top cottage cheese with second packet of Truvia and Jam.
Fold omelet and cook until egg batter is thoroughly cooked. Cottage cheese will remain relatively wet. Opt: Top with fresh fruit and dust with unsweetened coconut.
Makes one omelet. Easily serves two.
