Low Fat Cream of Mushroom Soup

Ingredients
1 pound mushrooms.5 Tbsp margarine1/2 tsp salt1 cup evaporated skim milk1 can (14.5 oz) chicken broth
Directions
Heat margarine in saucepan & slice mushrooms, adding to pan as you slice. Saute about 10 minutes, until golden brown. Add flour and salt, cook until thickened, about 1 minute. Slowly add skim milk & broth. Heat through and serve.

You could increase margarine for sauteeing. Original recipe called for 1/4 cup, I thought that was excessive. (And whipping cream, yikes!)
