Wheat Germ Bread

Ingredients
2 c hot water2 Tbsp yeast1 teas sugar1/4 c wheat germ1/4 c ground flaxseed3 Tbsp vital wheat gluten1/4 c sugar1 Tbsp blackstrap molasses1/4 c canola oil2 c white flour1 c + 2.5 c whole wheat flour
Directions
Proof yeast in water and sugar. After about 10 mins (when yeast is foamy) stir in wheat germ, flaxseed, wheat gluten, sugar, molasses, and oil.

Mix in white flour until you see strips of gluten (about 100 strokes). Then mix in 1 c whole wheat flour.

Pour dough on a large board for kneading (or right on the table) and knead in another 2.5 c whole wheat flour, adding 1/2 c at a time. Knead for about 10 mins until dough is solid, flexible, and smooth (not sticky).

Grease a large bowl and put the dough in to rise for 1 hour, covered with a wet towel.

Punch down and form into 2 loaves. Place the shaped loaves into greased pans and let rise another 45 mins. Bake at 350 for ~40 mins.
