Amazing Low-cal Low-fat Turkey Mini-loaves

Ingredients
2 pkgs Jenni-O Lean Turkey (93% lean)1 half each red pepper and yellow pepper, chopped1 small onion, chopped1 pkg frozen spinach, thawed and strained1 cup prepared wild rice (made with water and chicken broth)1 c Progresso Italian Bread Crumbs1/2 c parmesan cheese, grated2 large eggs1/2 cup tomato sauce
Directions
Preheat oven to 375 degrees F.

In a large mixing bowl add chopped onion, peppers, drained spinach (break up with fingers first), wild rice and ground turkey. Add bread crumbs, parmesan cheese, tomato sauce and eggs. Mix well with hands.

After washing hands, spray muffin pan with olive oil cooking spray (like Pam) and drop approx 1/3 cup of mixture. Sprinkle top with an additional 1/4 tsp of parmesan if desired. Bake at 375 degrees for 35 minutes. Remove and place on a cooling rack if you're going to store them before serving. Makes 24 Loaves/muffins. I usually have 2 muffins for lunch or dinner.

    pretty good, but even with the cooking spray they stuck to the side of the tin and ended up crumbling and looking pretty bad (gonna try again and make a loaf out of it, then just slice) - 9/6/11

    These are amazing!!! One question, though. Could you fix the ingredients list to say how much turkey & spinach? Is the turkey a 10 or 20 oz pkg? Spinach comes in 10 or 16 oz. I only added onion & garlic powder! I used 2 20oz turkeys, and a 16oz spinach. These will be on the permanent rotation! - 12/21/10
