Turkey Soft Taco Casserole

Ingredients
1 lb ground white-meat turkey1 medium onion1 can black beans2 cups salsa2 cups reduced fat cheddar cheese1 cup reduced fat sour cream6 low-carb tortillas1 packet taco seasoning
Directions
Preheat oven to 375.

Brown turkey with onion. Drain. Stir in salsa, taco seasoning, black beans, and sour cream.

Spray the bottom of a 9x13 pan with cooking spray. Line with three tortillas. Top with half of the turkey mixture, then cheese. Repeat. Bake covered for 25-30 minutes, then uncovered for an additional 5 until the cheese is melted and bubbly.

    I added jalepenos and canned corn to the meat mixture and then enchilada sauce to the top to keep it from getting dry I also added shredded lettuce to the top tasted even more taco-y i put the sour cream on top and not in the meat mixture.sooo yummy was a hit with a dinner get together! - 4/1/11
