Exotic Tomato & Legume Salad

Ingredients
Tomatoes and/or CucumbersBeans - Canned (any kind )Chickpeas - CannedHearts of Palm - Canned (Sliced)Artichoke Hearts - Canned (2 pieces for 1 serving)Red onions (or white)Black Olives - Sliced (if canned, use the ones canned in water)Extra Virgin Olive OilLime JuiceHerbs to taste to add to dressingSalt & pepper to taste
Directions
Just chop all ingredients to bite size pieces. For the dressing, combine the olive oil and lime juice or white wine vinegar (DO NOT ADD SUGAR!). You can play with the proportions, depending on the size of the salad., but be aware that olive oil, while very healthy has a LOT of calories! I like my dressing extremely vinagrey! Add the dressing to the salad and toss well. Enjoy!
