Low GI Chicken Faux Risotto

Ingredients
200g skinless chicken breast, cubed1 cup quick cook brown rice1 1/2 teaspoon chicken stock powder1 1/2 cups hot water1/2 cup peas (fresh or frozen)1 small carrot, peeled and chopped1 tomato, chopped
Directions
Combine 1/2 cup of hot water with 1/2 teaspoon of chicken stock powder, and allow to come to the boil in a large non-stick pan. Add the cubed chicken, ensuring it's in one layer, and cover for approximately 3 minutes or until cooked through.

Add peas, carrot, tomato and stock powder and rice; stir. Add remaining 1 cup of water, cover and cook for 10 minutes (or however long your rice needs to cook according to packet directions), stirring regularly.

Serves 2.
