3 Chicken Breast, no skin, 18.4 ounces4 Tbs. Flour, white2 Tbsp. Smart Balance Light Buttery Spread with Flax Oil1/4 Cup Beef broth, bouillon, consomme2 Tbsp Sherry, dry Lemon Juice, 3 wedge yields
Butterfly chicken breast and pound thin. Dredge in flour, salt and pepper. Fry over medium high heat in margarine. Till lightly brown on both sides. Remove meat to warm oven and deglaze pan with beef broth and sherry, scraping up all the brown bits left in the pan. Pour the liquid over meat, squeeze lemon wedges over chicken and serve.
