-1 (15 oz) can crushed pineapple-1 (16 oz) container cottage cheese, 1% milkfat-1 (8 oz) container Cool Whip-1 small package Sugar Free Strawberry Jell-O mix
In a medium saucepan, bring pineapple (with juice) and Jell-O mix to a rolling boil. Allow to cool to room temperature. Drain well.
In a large bowl, mix cottage cheese* and cooled pineapple mixture. Gently fold in Cool Whip**.
*I always drain off the cottage cheese. Otherwise the final consistency can get a tad runny.
**I have tried light, fat free and sugar free Cool Whip in this recipe. The taste is OK, but the recipe will fall flat. Use regular Cool Whip for the best consistency.
