2 ~ Tbs. olive oil1~ onion, chopped1~ green bell pepper, chopped1~ lg. garlic clove, minced1~ 7.75oz can hot tomato sauce (El Pato)1~ 15oz can stewed tomatoes, mexican flavor1~ 8oz can sweet corn1~ 15oz can chili w/beans (Stagg)
Cook ground chicken, drain liquids & set aside. Add oil to pan & cook onions & peppers until tender. Add minced garlic & cook until aromatic, about 30 seconds. Add hot tomato sauce, stewed tomatoes, chili & corn & simmer on low heat for about 20 minutes. Makes 6 ~ 1 cup servings.
