Crockpot Carnitas

Ingredients

4 lb pork sirloin roast (or boneless shoulder roast)1 medium raw yellow onion3 cloves garlic1 bottle Mexican Lager (or other beer you like)1 tbl. oreganoJuice of 1 lime (& chopped zest)Juice of 1 large orange (& chopped zest)
Place roast in a medium hot deep skillet and brown each side (approx 5 minutes each side)
Dice onion, and chop garlic
Removed roast and place it in a large crockpot. Drain all but a thin film of grease from the skillet.
Put onions and garlic into warm skillet, and saute until soft (2 minutes)
Pour beer into the Onion mixture, and deglaze pan. Cook for 2 or 3 minutes. Pour this liquid over the pork roast in the crockpot.
Remove the zest from 1 line and 1 orange, chop and sprinkle over the roast. Squeeze the juice of both fruits over the roasts.
Sprinkle 1 tbl. oregano flakes over the pork roast.
Cook in crockpot on high for 5 hours, or low for 10 hours. Serve meat with a bit of the juice in the pot YUM!
