Pork and Veggie Teriyaki

Ingredients
4 ounces of pork tenderloin (any flavor)1/4 cup chopped onions, green peppers, mushrooms and tomato1 clove garlic, pressed or chopped2 tablespoons teriyaki1/2 cup brown rice cooked
Directions
Prepare instant brown rice while cooking pork teriyaki.

Begin by spraying pan with non-stick cooking spray. Cook onions and green peppers to soften them a little bit. Add left over pork tenderloin (already cooked and cut into bite sized pieces). Heat. Add mushrooms, heat. Add tomato until warm.

Serve pork teriyaki over rice. Makes 2 servings.

Add low fat cheese and melba toast for a nice side item.
