Chicken Soft Tacos Crockpot Style

Ingredients
2 boneless, skinless chicken breasts16 oz jar of salsa4 oz can diced green chilis15 oz can black beans15 oz can sweet corn2 tbsp lime juice, or whatever you get from 1 lime
Directions
Put salsa, chicken and lime juice in the crockpot. Cook on high about 6 hours or low all day. Shred the meat with 2 forks (it will pull apart easily) and return to crockpot. Add the drained corn, rinsed blackbeans and diced green chilis. Cook another 1/2-1 hour on high until heated through. Serve with tortillas and toppings of your choice. Serves 6.

    This recipe is amazing! I added a can of chopped tomatoes with green chilis (and omitted just the can of chilis) and omitted the corn, but I am sure the corn would be good. It was great to put all these ingredients together in the crockpot and then go off to work. shred and mix and eat! Yum. - 11/5/11

    Actually, 16 oz is 1 pound. I assumed each chicken breast averages about 8 oz., so just use 2 chicken breasts. Hope you like it!
