12 oz pkg tapioca starch or yuca harinaone egg3 tlb butter12 oz queso fresh (Mexican farmers cheese), crumbledwater (as needed)
Preheat oven to 350. Brush mini muffin pans with the oil Crumble the queso fresco (a type of fresh farmer's cheese found in Mexican markets) and mix well with the other ingredients, adding the tapioca starch little by little to prevent it from lumping together. Add a little water as needed. Roll into golf ball-sized doughballs and place in muffin pans. Bake for 15 minutes at 350 degrees.
