1 garlic clove, peeled and cut in half 1 tsp dijon mustard (e.g. Maille, Grey Poupon)3 T balsamic vinegar thyme (even better if fresh), freshly ground black pepper, and salt to taste
Peel garlic clove, and cut in half. Put in sealable container (I use an old mustard jar), close jar, and shake to infuse. Add mustard, balsamic vinegar, olive oil, and herbs. Close jar, and shake. The mustard acts as a "catalyst", allowing the oil and vinegar to mix (there shouldn't separate). Adjust seasonings as desired (can add more mustard, etc.). Very fast........
