Stuffed Zucchini

Ingredients
3 Zucchini about 1/2 pound each1/3 cup Scallions-chopped1/2 pound Very lean ground beef1 can Stewed tomatoes1/2 Tbls Olive Oil1/2 cup Onion-chopped2 oz. 97% Fat Free Ham-diced1/4 tsp Salt1/4 tsp Oregano-groundPepper to taste
Directions
Place whole zucchini in boiling water for 5 min. Take out and let cool. Cut in half lengthwise and scoop out seeds and some pulp into a bowl. Place zucchini shells in a baking dish. Mix scallions, ground beef, salt, pepper and oregano with the zucchini pulp. Divide evenly between the 6 halves, as you spoon the mixute into the shells.
In a medium skillet suate onions with olive oil until translucent. Add ham and cook about a minute. Add tomatoes, crushing them while stirring them in. Cook 5 min. Pour over stuffed zucchini. Bake at 375 degrees for 45 minutes. Makes 6 servings-1 half zucchini each.
