Spanish Rice

Ingredients
1/2 cup onion, chopped1/2 cup green pepper, chopped1 tbsp olive oil2 cup brown rice, uncooked (Minute)1 tsp garlic powder1/2 tsp chili powder1/4 cup low sodium tomato puree2 cups water
Directions
In a skillet, saute onions and green peppers in olive oile until softened.


Add rice to skillet, stirring constantly until rice is lightly browned


Add garlic powder, chili powder, tomato puree and water to skillet. Cover and simmer on low heat until rice is tender and water is absorbed, about 15 minutes.

Serving size is a 1/2 cup.
