Betty Brown's Blueberry Buckle

Ingredients
Cake:1 1/8 cups sugar3/8 cup shortening (I used shortening)2 eggs¾ cups unsweetened soy milk3 cups flour3 tsp. baking powder¾ tsp. salt3 cups well drained blueberriesTopping:¾ cup sugar1 cup flour1 cup oats¾ tsp. cinnamon¾ tsp. nutmeg3/8 cup margarine
Directions

Butter and flour a 9x13 baking pan. Preheat oven to 350*.

Mix sugar, shortening, and eggs. Stir in milk. Blend in dry ingredients and mix until wet. Blend in blueberries gently.

Combine topping ingredients. Mix until crumbly.

Sprinkle cake batter with topping.

Cook about 45 minutes at 350* until a toothpick in the center comes out dry. I let mine cook a little less to be yummy and chewy!
