3 eggs 2 c. sugar1 c. salad oil 3 t. vanilla2 c. grated, unpeeled zucchini 3 c. flour1 t. salt 1 t. baking soda¼ t. baking powder 3 t. cinnamonoptional 1 c. walnuts,
Beat eggs; add sugar, oil and vanilla; beat well. Stir in grated zucchini. Sift dry ingredients together; add to batter and blend. Stir in nuts or other additions and pour into 2 greased bread pans. Bake 350 for 1 hour.
