sweet n sour stir fry

Ingredients
1 lb turkey sausage, casing removed and sliced into 1/2 inch slices1 large onion, quartered and seperated1 cup shredded carrot1 can (8 oz) unsweetened pineapple chunks1 tablespoon cornstarch1/2 to 1 teaspoon ground ginger6 tablespoons water2 tablespoons soy sauceHot cooked rice
Directions
In a large non-stick skillet or wok, stir-fry sausage for 3-4 min or until lightly browned. Add onions and carrots; stir-fry until crisp-tender. Drain pineapple, reserving juice. Add pineapple to sausage mixture.

In a small bowl, combine cornstarch and ginger. Stir in the water, soy sauce and reserved pineaple juice unitl smooth. Add to the skillet. Bring to a boil; cook and stir for 1-2 min or until thickened. Serve over rice if desired.
