Morrocan style chicken pilaf

Ingredients
1 tsp olive oil1/2 cup onions chopped400g boneless, skinless chicken breast3.5 cups water1.5 cups Uncle Ben's wholegrain brown rice1 tsp chicken bouillon1/2 cup dried apricots chopped1/2 cup raisins1/2 tsp cinnamon1 tsp cumin1/2 cup almonds chopped
Directions
Heat olive oil in a large non-stick skillet.
Add chicken and onions and sautee until chicken is lightly browned.
Meanwhile, put water rice and chicken bouillon in a medium pot and bring to a boil. Reduce heat and simmer, covered for 15 minutes.
Add apricots, raisins, and spices to rice and continue to simmer for 5 more minutes.
Add rice mixture to onions and chicken and cook on high for about 2 minutes stirring constantly.
Garnish with almonds and serve.
