Puerto Rican Red Beans & Brown Rice w/ Chorizo

Ingredients
1 Tbsp Extra Virgin Olive Oil1 sm Onion diced2 cloves Garlic1 can of Red Kidney Beans2 tsp Ground Cumin1 6oz Tomato Paste1/2 c Water3 links of Chorizo diced or sliced2 cups of Kraft Minute Brown Rice
Directions
Serves 4

Prepare Rice 2 cups water vs rice
Heat skillet on stovetop
Add EVOO, Garlic & Onion - sautée
Add Chorizo - brown
Add Beans, Tomato Paste, 1/2 c. Water, Ground Cumin - stir and heat until desired temp.

Spoon on top of rice, enjoy!

    My family thought this was very good. Easy to prepare and fairly quick. I used regular brown rice and cooked that while preparing the rest of the dish. Would definately make this again! - 5/10/10
