Peanut Soy Noodles

6oz Barrilla Plus Angel hair pasta1c Fat free chicken stock1 1/2T peanut butter1/2c Soy Sauce1 clove garlic, minced1t ginger root, minced1c shelled, hot edamame1container of firm tofu, diced into cubes1t oilive oil1c fresh asparagus, cut into 1/2 in pieces2t sesame oil
In a small saucepan, combine the stock, peanutbutter, soy sauce, garlic, ginger and sesame oil. Simmer.
Cook pasta according to box directions. In the last 2 minutes of cooking, add the asparagus and edemame. Drain.
While the pasta cooks, heat 1t olive oil in a nonstick sautee pan. Sautee cubes of tofu until crip on the outside, hot on the inside.
Combine the cooked noodles, edamame, asparagus and sauce in bowl. Toss to combine well. Add in the tofu and serve. Can be served hot or cold.
Makes 6 1cup servings.
