Low fat banana oatmeal muffins

Ingredients
* 1 small ripe banana * 1/3 cup rolled oats * 4 tbsp honey * 1 tsp canola oil * 1 egg * 1 cup flour * 1/8 tsp baking powder
Directions
Mash the banana and whisk it together with the eggs. Stir in the honey, oatmeal and canola oil. Add the flour and baking powder and stir until mixture is homogeneous. Pour into 8 muffin paper cups sprayed with nonstick fat-free spray. Bake in an oven preheated to 300 degrees.

Yields 8 single-muffin servings.

    I doubled this recipe and am sure I doubled all the ingredients but the muffins did not rise. Perhaps there is an error. 300 degrees seems a little low and only 1/8 tsp of baking powder (for single recipe) seems too low also. Very disappointed. - 9/26/09
