Peach Ice Cream

Ingredients
egg substitute to six eggs (or six eggs, pasteurized if available)3 cups sugar10 fresh peaches, pitted and chopped6 cups fat free half and half (or 4 cups half and half and 2 cups light French vanilla coffee creamer)2 t vanilla extract3/4 t salt
Directions
In large bowl, mix together egg substitute and sugar until smooth. Puree peaches in blender. Stir five cups of puree into egg mixture. Stir in half and half (and creamer if using), vanilla and salt. Mix well.
Pour mixture into freezer canister of ice cream maker and freeze according to manufacturer's instructions. Serves 32.

    I made this today, with one substitution, I put one cup of heavy cream in for one of the cups of FF half and half. I wanted to make sure it wasn't icy, or granular. It came out perfect. The flavor is delicious, fresh, wonderful. Thanks for lightening it up, and I highly recommend it! - 9/4/09
