Quick Corn Bread

Ingredients
3/4 cup enriched corn meal1 1/4 cup all-purpose flour1/4 cup sugar2 teaspoons baking powder1/2 teaspoon salt1 cup 1% milk1 egg, beaten1/4 cup canola oil
Directions
Preheat oven to 400.

Blend all dry ingredients. Stir in remaining ingredients until dry ingredients are moist.

Pour batter into ungreased cast iron skillet and bake for 20 to 25 minutes or until a wooden toothpick inserted into the center comes out clean.

Makes about 6 servings.

For best flavor and texture serve warm.
