"Clean out the Fridge" Soup (June 17th, 2009 version)

Ingredients
*6-7 cups of chicken stock/broth *2 tbsp. tomato paste*1 head chinese cabbage*1 onion, rough chop*2 baby onions, rough chop*3 garlic scapes, fine dice*1 cup sugar snap peas*A few sprigs of thyme, parsley, sage, and oregano, fine dice*About 1/2 lb. of white meat poultry. I used 5 ounces of left over roasted chicken and 2.5 ounces of smoked turkey breast), rough chop*Salt + pepper
Directions
*Prep your vegetables and bring the stock to a boil over high heat.
*Saute the onions and garlic scapes (or cloves--what ever you have is fine) until fragrant and then add them to the pot.
*Add the cabbage and snow peas and bring the soup back to a simmer.
*Add the meat, herbs, salt, pepper, and tomato paste and then simmer for 1 hour or until the taste suits you. This batch had a really great flavor from the smoked turkey breast!

Makes about 7 servings, but they are quite low calorie, so feel free to freeze in double-portions.
