Quick Potato Soup

Ingredients
large onion diced (1/2 cup onion required)2 large potato diced2 stalks celery diced1/2 tbsp butter2 tsp italian seasoning1 tsp black pepper4 cups low sodium vegetable stock1 cup frozen peas
Directions
dice onion, potato and celery. heat 1/2 tbsp butter in medium saucepan add in onions and celery, saute until soft around 5 minutes. Add in italian seasoning and pepper. Add in potatoes saute 2 minutes. Add stock and bring to boil. Simmer on low for 15 minutes or until potatoes are soft. Use potato masher to mash potatoes in soup. Add peas, heat for a 1-2 minutes and serve.
