Cauliflower Potato Curry

Ingredients
-1 T. olive oil-1 t. cumin seeds-1 t. mustard seeds-1 c. onions, chopped-1.5 c. diced tomatoes-Curry Powder, Turmeric, Corriander to taste-Fresh Vegetables (Cauliflower, potatoes, etc.)
Directions
Heat oil in stockpot/pan. Add seeds and cover, shaking over low heat until seeds finish "popping". Add onion and saute until soft. Add in tomatoes and spices and simmer until mixture becomes shiny w/ juice/oil. (About 5-10 minutes) Add chopped vegetables of your choice (this is calculated with about 2 c. cauliflower florets, 1 potato, and .5 cup peas.) and simmer until vegetables are cooked to your liking. Makes approximately 4 generous servings.
