Max's Quinoa Salad

Ingredients
2 cups water1 cup dry quinoa1/2 cucumber2 roma tomatoes1/4 onion1/2 red bell pepper2 tbsp olive oil2 tbsp vinegarbasilparseleysalt pepper
Directions
Set the water to boil and add salt. Once boiling, add quinoa. Cook (uncovered), stirring occasionally. Once most of the water is absorbed set heat to low and cook until all moisture is absorbed.

Once cooled, add cucumber, tomato, onion and pepper. Stir to combine. Add olive oil, vinegar, season with salt and pepper and add basil and parsley.

Makes 4 servings.
