190g Tinned Chick Peas1 Can Tinned Chopped Tomatoes In Juice (400g)155g Courgettes40g Red Onions2 Cloves Garlic1 tbsp Olive Oil1 tsp Brown Sugar1-1/2 tbsp Tandoori Masala Spice Mix Dash Salt & Pepper (or to taste)
Drain Chick Peas
Slice courgette
Dice Onion
Finely Chopped Garlic
Heat olive oil in pan then add diced onion, chopped garlic and cook till softened.
Add sliced courgette and cook for few minutes until slightly softened, add tandoori spice, salt and pepper and stir till all ingredients are well coated.
Add drained chick peas, tinned tomatoes and sugar to pan- stir till tomato juice reduces and thickens.
Makes 4 1/2 cup servings.
