Tomato Basil and String Cheese Salad with Balsamic Dressing

4 medium Red Ripe Tomatoes2 sprigs Fresh Basil, chopped1/2 onion, finely chopped (I used a Walla Walla and added part of the green top)3 cloves fresh garlic, finely chopped2 tablespoons Olive Oil4 tablespoons Balsamic Vinegar4 sticks Light String Cheese (1 oz each).
Finely chop the onion and garlic, and place in a plastic or glass bowl (Apparently Balsamic Vinegar doesn't react well to metal).
Add the olive oil and Balsamic Vinegar to the bowl and mix.
Chop the Basil and Tomatoes and add to the bowl. Mix a bit more.
Cover and put in refrigerator until meal time (it can be served right away, but I think it's better to let it sit for a while).
Add string cheese right before serving - it can either be sliced into tiny rounds, or served with the whole stick for later shredding (because it's fun to play with your food, no matter how old you are!).
Serves 4.
