Swedish Rye Bread

Ingredients
2 cups medium or white rye flour2/3 cup dark kmolasses1/3 cup solid shortening2 teaspoons salt2 cups boiling water1 package dry active yeast1/2 cup warm water3 to 3 1/2 cups all-purpose flour
Directions
In large mixing bowl combine rye flour, molasses, shortening, salt and boiling water. Cool to lukewarm. soften yeast in warm water; add to mixture. Gradually add all-purpose flour to forma stiff dough. (NOTE: At this point I put all of these ingredients in my bread machine and let it mix and knead the dough for me.) Knead on a well floured surface until smooth and satiny, about 10 minutes. Place in a greased bowl, turning dough to grease all sides. Cover and let rise in a warm place until doubled (1&1/2 to 2 hours). Punch down dough. cover and let rise for 30 minutes. Place dough on floured surface and mold into a ball. cover and let rest for 15 minutes. shapr into a round loaf and place on greased cookie sheet. cover and let rise again until doubled--about 1 hour. Bake at 350 degrees for about 35 to 40 minutes or until golden brown. Remove from oven and cool on wire rack before slicing. Enjoy!

Makes 1 large or 2 small loaves. I slice the large loaf into 16 slices
