Pimento Cheese Mashed Cauliflower

Ingredients
1lb Cauliflower Florets3 Tbsp Spray butter2 Tbsp Fat Free Half & Half3/4 C Shredded Sharp 2% Cheddar Cheese2oz Fat Free Cream Cheese1/4 C Thinley Sliced ScallionsSalt & Pepper to Taste
Directions
Boil cauliflower in salted water for 30 minutes, until fork tender; Drain and dry in a hot pan over medium heat (do not brown).

In a food processor blend cauliflower until smooth with:
3/4 C Cheddar Cheese
2 oz Creem Cheese
2 oz Pimentos (half)
3 Tbsp Spray Butter
2 Tbsp Half Half

Transfer to bowl and add remaining pimentos and scallions; season with salt and pepper
